English cheese is referred to cheese that's been made in England, the well known cheese producer country. Although nowadays most countries in the world have made the same soft cheese, hard cheese or blue cheese, but the original made in England cheese is still has its own fans.
The well known traditional English hard cheeses are Cheddar, Cheshire and Derby. Derby is similar to cheddar but derby doesn't go cheddaring process and has slightly high moisture content. Derby English cheese producers are fowler forest, Belton cheese, Joseph Heler and Reeces of Malpas.
Cheddar cheese is probably the most consumed cheese in the world. In UK, there is special regulation for cheddar cheese to undergo hand chedarring process. Cheddar English cheeses that recommended are Cathedral city, Pilgrims Choice and Seriously Strong.
Cheshire cheese is sold like other cheese, when the cheese is young it's bright and white in color, when it's mature it's become firmer in texture and slightly darker in color. Blue Cheshire is also available. Cheshire producers recommended are Belton cheese, Joseph Heler and Reeces of Malpas.
Red Leicester cheese is also one member of the English cheese family. Some people use it as an alternative for cheddar because it melts beautifully and add color to sauces and add flavor to salads.
