Smoked cheese is not so familiar (at least with me who am more common with smoked beef!). According to wikipedia, smoked cheese is any cheese that has been treated specially by smoke-curing. This smoking process caused a yellowish brown outer skin.
Some people think the smoking process is adding special taste while other is vice versa.
