Stilton Cheese is one type of blue cheese (cheese with blue veins) made in England. Only six dairies in the country of Derbyshire, Leicestershire, and Nottinghamshire, stilton cheese can "legally" be made. Stilton is a protected name, there are two kinds of stilton cheeses: blue stilton cheese and white stilton cheese. Stilton cheese product has to go through an inspection by an independent government agency to keep up the standard.
In short, if the cheese is not made from the licensed diaries of the above three countries, consider it an imitation one! You might find the appearance of imitation cheese is like Stilton cheese but the quality is different.
Suggestion for enjoying Stilton Cheese
Stilton cheese has salty taste, eat it with red wine (Port or Sauternes) or white wine (Riesling).
Stilton cheese dip is made by mixing a few ounces of stilton cheese with plain yogurt using a mix fork. Stir it until you get the consistency as desired. Stilton cheese is not as dense as cheddar cheese. It gently breaks apart, so making a cheese dip from stilton cheese won't need a microwave help.
Stilton cheese is best served at room temperature, so you'd better take the cheese out from refrigerator. This way is best for salad, soup or dip. For cheese slice on your sandwich, slice it straight from the fridge.
Don't forget to keep your stilton well wrapped in a refrigerator.
